As Culinary Director, I see firsthand how fresh sourcing and scratch cooking enhance resident health, satisfaction, and daily life.

In my kitchen, from-scratch cooking begins with real, basic ingredients. I chop, season, mix, and cook each meal myself. Instead of opening boxes or reheating pre-made items, I build every dish from the ground up. Because of this hands-on approach, I maintain full control over quality and flavor.
Using fresh ingredients directly supports resident health. For example, this approach allows us to limit sodium, added sugars, and unhealthy fats. At the same time, we maximize vitamins, minerals, and high-quality protein. Therefore, residents receive meals that nourish both body and spirit.
Adapting meals for older adults requires intentional balance. First, we consider individual health needs. Then, we adjust textures through chopping, softening, or pureeing when necessary. In addition, we closely monitor protein, sodium, and sugar levels. By doing so, we support both safety and satisfaction.
Comfort foods remain essential in senior living dining. However, we refine how we prepare them. Rather than changing what residents love, we improve the ingredients and technique. As a result, meals feel familiar while still supporting wellness.
One resident-favorite made entirely from scratch is meatloaf. Not only is it comforting, but it also showcases how simple ingredients can create something memorable. Below is my large-batch recipe.
Yield: Large-batch preparation
Ingredients
20 lbs. ground beef 80/20 works well
5 lbs. finely diced onions approximately 12 to 14 large
2 lbs. finely diced green peppers optional
3 cups minced garlic
5 dozen large eggs 60 eggs
12 cups breadcrumbs about 3 lbs
3 cups milk
2 cups ketchup for mixture
1½ cups Worcestershire sauce
½ cup salt adjust to preference
¼ cup black pepper
½ cup dried parsley
2 tbsp dried thyme optional
Glaze
4 cups ketchup
1 cup brown sugar
½ cup mustard
Instructions
First, preheat oven to 350°F.
Next, combine ground beef, vegetables, eggs, breadcrumbs, milk, ketchup, Worcestershire sauce, and seasonings in large mixing tubs. Mix just until combined. Do not overmix.
Then, divide evenly into full-size hotel pans or form into large loaves about 4 to 5 lbs each.
After that, spread glaze evenly over the top.
Bake at 350°F for 60 to 90 minutes, or until the internal temperature reaches 160°F.
Finally, allow meatloaf to rest for 15 to 20 minutes before slicing and serving.
Scratch cooking requires more time and skill. Nevertheless, that extra effort makes a difference residents can taste. Freshly prepared meals enhance flavor, support wellness, and create a dining experience that feels personal and comforting.
