VITALIA Senior Residences® at Strongsville Culinary Department to Honor Asian American Pacific Islander Month

May is Asian American Pacific Islander month, or AAPI for short, a time to celebrate the Asian and Pacific Islanders in the United States and their contributions to the history of this country. By recognizing the culture, history, and achievements of Asian American and Pacific Islanders, we can broaden the understanding of their countries and cultures, as well as enhance the appreciation for all that they have given to make this country great.

As is the case with many commemorative months, AAPI originated with Congress. In 1978, Congress passed, and President Jimmy Carter signed into law, a joint resolution declaring a week in May as “Asian/Pacific American Heritage Week.” This was later expanded to a month, and in 1992, May was designated as Asian/Pacific American Heritage Month.

At VITALIA Senior Residences® at Strongsville Strongsville, OH, we will be celebrating and honoring the countries of India, Korea, and Taiwan, and the state of Hawaii.

The dishes I’m making are butter chicken, apple chutney, naan, and tandoori shrimp from India; kimchi fried rice, lo mien salad, and beef bulgogi from Korea; luau stew, Spam sliders, and Hawaiian meatballs from Hawaii; and braised pork rice, Taiwanese fried chicken, and spring rolls from Taiwan.

I chose butter chicken from India because it’s a favorite of my team and something approachable we thought our residents would enjoy. I’m excited to highlight Korean kimchi and introduce it to our residences. Spam sliders from Hawaii were chosen because who doesn’t love Spam? It’s a request we hear from residents. Taiwan braised pork rice is delicious! We love any opportunity to share highly flavorful braised pork.

As a culinary director, I feel we should celebrate Asian American Pacific Islander Heritage Month. It is an excellent opportunity to embrace the influence it has had on global cuisine.
